Pumpkin Pie Oatmeal

    Cold mornings have me craving something warm and filling. This Pumpkin Pie Oatmeal Recipe combines some of my seasonal favorites for a fiber packed start to the day. For a balanced breakfast, have this oatmeal along with a hard boiled egg or 2. Enjoy!

    Makes 2 servings

    1 cup water
    1/2 cup canned pure pumpkin
    1/2 cup old fashioned oatmeal
    1 tbsp cinnamon
    1 tsp pumpkin pie spices
    2 tbsp Stevia (optional)

    Place all the ingredients in a blender container and blend until smooth.

    Bring water to a boil in a small pot.
    Stir in pumpkin and remove from heat: turn heat to low.
    Stir in oats and put pot back on burner gradually increasing heat to medium low – reduce heat if it begins to bubble or splatter.
    Cook for 7 mins until oats are cooked and fluffy.
    Stir in cinnamon, pumpkin pie spices and Stevia.
